About

Paillard operates as a high-volume bakery and café that specializes in traditional French artisanal techniques. The menu features an extensive selection of crusty baguettes, flaky croissants, and buttery pastries baked on-site throughout the day. Substantial sandwiches are crafted using house-made breads, frequently paired with hearty soups and crisp salads. The interior design emphasizes an industrial-chic aesthetic with high ceilings, exposed brick walls, and long communal tables designed for efficiency and rapid throughput. Guests order at a central counter where glass cases display an array of colorful macarons, tarts, and dense chocolate desserts. This establishment prioritizes the rapid production of quality wheat-based products within a bustling and utilitarian setting. It remains a central destination for those seeking authentic European-style baked goods served in a streamlined, self-service environment.

Review Summary

Paillard is widely recognized as a popular destination in the heart of Quebec City, frequently praised for its extensive selection of fresh, high-quality French pastries, artisanal breads, and satisfying breakfast sandwiches. Many visitors highlight the buttery, flaky texture of the croissants and the delicious flavor of items like the almond croissant and mushroom soup. The atmosphere is generally described as lively and welcoming, with ample seating that makes it a convenient spot for both small groups and families. While experiences can vary due to the high volume of customers and occasional service inconsistencies, many guests appreciate the professional and friendly staff who are often able to assist in both English and French. Despite some mixed feedback regarding coffee preparation and wait times during peak hours, it remains a go-to location for those seeking an authentic bakery experience in a beautiful, historic setting.

I honestly think this place is a bit overrated. At the time of writing, it had over 5,000 reviews with an average rating of 4.3 stars, so I was expecting a much better experience.

We tried the Chipotle chicken sandwich, olive bread, éclair, & croissant. Unfortunately, the sandwich & olive bread didn't taste fresh, & the chocolate filling in the éclair wasn't particularly enjoyable. The croissant, however, was delicious.

Disappointed bought 2-iced coffees that were terrible & a pastry that I asked them to cut in 1/2 but said no they couldn't do it!
I shouldn't have gave them a 2 dollar tip 😳

Completely unreasonable that this place has 4.3 stars

The pastries are the same if not worse than cheap grocery store pastries. The coffee is just Nespresso.

However in past reviews said that the pastries are the best in Quebec is either a fake review or has been eating cardboard their whole lives.

To make matters worse the line took forever & the cashier kept speaking french to other customers who clearly did not understand french. She would repeat questions several times before sighing & repeating in english.

No clue why this place has a 4.3-star rating. It must be from tourists who don't know any better. The coffee is made from Nespresso pods & tastes like watered-down milk. The pastries are stale, & you'd honestly be better off buying something from a grocery store.
To make matters worse, they got my order wrong twice in a row. This was a serious allergy concern, yet my concerns were brushed off. The staff either aren't trained on what each pastry is or can't read the labels they put on the display.
I ordered the Croc Framboise (raspberry) but was given an apple one, even though there wasn't even a label indicating apple. On the third attempt, the staff had to cut the pastry open just to confirm it was actually raspberry.
The other photo shows a canelé that was labeled as a madeleine, which pretty much sums up the attention to detail here…
Overall, I wouldn't recommend this place, especially if you have food allergies or expect staff to know what they're serving.

Great food, but the lines are always so long. It seems that if they were to use a better way of queuing & serving the food, they would do a lot better, & the experience for the customers would be vastly improved.
